Preheat your oven on 140 degrees Celsius / 285 degrees Fahrenheit. In a large mixing bowl (if using a hand mixer) or the bowl of a stand mixer fitted with the paddle attachment, mix the very soft room temperature Cream Cheese and Sour Cream (see note 1) until completely smooth and no lumps remain.

Fold the chocolate cream cheese mixture into the whipped cream, a quarter of the cream cheese mixture at a time. Transfer the filling to the tin and spread evenly over the biscuit base. Chill in the fridge for at least 6 hours but preferably overnight. Decorate with grated orange zest and chocolate pieces. Enjoy!

1. Crush the biscuits and mix with butter. Melt the chocolate oranges. Combine the whipped cream, cream cheese, icing sugar, lemon juice and orange essence and fold. Add the cooled chocolate oranges. Smooth on top of the base and cool. 2. When you're ready to serve, remove the cheesecake from the tin.

Prep: Preheat oven to 355°F (180°C). Grease an 8" or 9" round springform pan with a piece of cold butter. Step 1: Use a food processor to crush whole oreos into fine crumbs. In the bowl of a stand mixer, beat the cream cheese with the paddle attachment on medium speed until smooth. Scrape down the sides of the bowl with a spatula. Add sugars and beat on medium-low until mixed in. Scrape the bowl again. Add the sour cream, vanilla extract, orange oil and orange zest.

Melt the chocolate and butter using a double boiler as above. Stir until smooth. Allow the chocolate to cool slightly. Gently remove the cheesecake from the tin and peel off the paper from the sides. If you find its quite sloppy, whisk till thick! OR - With a stand mixer, whip the cream cheese and icing sugar until smooth.

To make the topping: combine the chopped chocolate and heavy cream in a small bowl. Use a double boiler to melt (or a microwave at 50% power). Once melted and smooth, add the a half-teaspoon of leftover orange zest from the orange. Pour the chocolate on top of the cheesecake, spreading it to the edges with a spatula.
